Recipe: Chocolate Chip Cookies


I have baked this recipe three times now, making a few tweaks, and think I have a good result now.  I would describe these as a "classic" chocolate chip cookie.  They are tasty, and soft.  So, here it is:

Time:  Plan for a few hours.  20 minutes to mix the dough (30 by hand) and a few hours to bake it all.

Ingredients:

  • Cake Flour: 2 cups minus 2 tablespoons or 8.5 ounces  *see below for photo
  • Bread Flour: 1 2/3 cups or 8.5 ounces   *can substitute all purpose flour
  • Baking Soda: 1 1/4 teaspoons
  • Baking Powder: 1 1/2 teaspoons
  • Coarse Salt: 1 1/2 teaspoons
  • Unsalted Butter: 2 1/2 sticks or 1 1/4 cups 
  • Light Brown Sugar: 1 1/4 cups or 10 ounces
  • Granulated Sugar: 1 cup plus 2 tablespoons or 8 ounces
  • Eggs: 2 large
  • Vanilla Extract: 2 teaspoons
  • Chocolate Chips: 1 1/4 pounds

Cake Flour: (notice, this is America's Favorite since 1894, as voted on by people who know!)


Combine flours, baking soda, baking powder, and salt into a bowl.  Mix well. Set aside (in a kind, loving manner)


Using a mixer with paddle attachment, cream together butter and sugars until light a fluffy
     * You can do this by hand, but you will probably only make that mistake once.  After that, you will know why people pay for stand mixers.




Add eggs and vanilla and allow them to be stirred into mix.


Reduce to slow speed and gradually add other ingredients that were previously set aside.  Add it a cup or so at a time, allowing it to get mixed in before adding more.  All the while, be sure to tell these ingredients how you appreciate their patience, and they were number one all along.


Add chocolate chips (those you haven't eaten already)


Fold them in (what a great Culinary School term)


Spoon chunks onto a cooking sheet a few inches apart

Bake for 14 minutes at 350

Let cool for 10 minutes before removing

Eat one warm with a cold glass of milk!
