This pizza dough is very good, if done correctly. Don't skimp on good ingredients, and take your time.
Ingredients:
Water, 1 1/2 cup, warm to touch
Yeast, 2 teaspoons
Sugar, 2 teaspoons (sub: honey)
Bread Flour, 16 ounces or 2 3/4 cups
Semolina Flour, 3.5 ounces or 1/2 cup
Salt, 1 teaspoon
1.) Proof the yeast. If active dry, mix yeast and sugar in large bowl and pour in warm water, if the water is too hot it will kill the yeast, too cool, and it is not effective. Mix slightly and wait 2 - 3 minutes for yeast to foam/rise to surface.
2.) Add flours and salt, mix until it forms a ball. Then cover the counter in flour and start kneading the dough, see video. After about 8 minutes of kneading proceed to next step.
3.) Coat another large bowl with olive oil and add the ball of dough, cover with clean kitchen towel and let sit in warm place with no draft for about 1 hour, or until dough doubles in size.
4.) Flour counter, dump dough out, punch it down. Cut the dough in half, put half in refrigerator if you only need one pizza now, you can use the one in fridge for up to 4 or 5 days.
