Paleo Banana Bread


If you are into the Paleo thing, this may work for you, or if you aren't down with Gluten, that nasty rascal.

Preheat oven to 350

In some sort of mixing device (Vitamix, stand mixer, manual labor, etc) combine and mix well.  It should be uniform and not clumpy.

  • 3 ripe bananas (if mixing by hand, might want to mash first)
  • 3 eggs
  • 4 tbsp butter, melted (or coconut oil)
  • 1 tbsp vanilla extract
In a separate bowl, combine below dry ingredients and make sure all clumps are out.
  • 1 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
Stir dry ingredients into mixing bowl with wet.  Don't beat here, just mix well with a spatula or such.

At this point you can add some walnuts into the mix and gently fold them in.

Also, this isnt too sweet, so if you need more sweetness, add a appropriate amount of sweetener.  If cane sugar, perhaps a few tbsp.

Grease bread pan, pour in batter, bake for 45 mins or so.  I would start checking with a toothpick after 35 mins.  Once the toothpick comes out clean, you should take out and set to cool.

Now, when serving, slice it up, throw on some form of butter and enjoy.

I have baked this recipe three times now, making a few tweaks, and think I have a good result now.  I would describe these as a "classic" chocolate chip cookie.  They are tasty, and soft.  So, here it is:

Recipe: Guacamole


This guacamole is always a big hit at parties or when hosting guests.  In fact, I ate this entire bowl in 24 hours after I made it.  This is an easy recipe if you do it the way showed in the video, a bit harder if you decide to chop your own tomatoes, onion, and cilantro.

I decided to start posting some recipes that would be easy for people that don't cook a lot.  Number 1: french toast.  It takes minimal ingredients and about 10 to 15 minutes to make.  So, have at it, and feel free to post comments on your own recipes or how this one turned out for you.
